This pinto bean recipe is so good and so easy! First, soak your beans or do a quick soak** before cooking. I use my Instant Pot to make these fast and stress free. To use the instant pot just add all the ingredients into the pot, put on the lid and press the beans button. Viola, 30 minutes later a delicious pot of pinto beans ready to enjoy.
If you don’t have an Instant Pot (why?!). Kidding, you can still make delicious beans on your stovetop. Add all the ingredients in a large pot and cover with water into a dutch oven or pot (at least 7 quart). Fill with super hot water to cover 2 inches over the beans. Bring the beans to a boil. Pop the lid on and reduce heat to low and cook for 3.5 hours.
**If you’re like me and always forget to soak your beans overnight (there are so many other things to remember) then go ahead and
quick soak the beans. To do this get a large pot and covering the beans with water and bringing to a slight boil. Turn off heat, put on a lid and let the beans sit for an hour. Pour off liquid and rinse beans and you’re all set.**

2 Slices Bacon (cut in half)
1 Onion, Diced
2 cloves garlic, Minced
1 Jalapeno, Sliced
1 Tbs Cumin
1.5 Tbs Salt
Fresh Ground Pepper
Water to cover beans
