This was my grandmother’s recipe but I changed it a little and turned it grain free. These bentzes are tasty sweet or savory and are super easy and healthy! They are kind of like a pancake but with a creamy flavor. They are moist with an amazing texture. You’ve got to try this recipe. My grandmother said these were a favorite of hers growing up in the 1930s. She had a fondness for blueberries and loved to add them when she made this.
If you’d prefer to use flour use 1 cup flour and omit the almond, coconut and gelatin.
2 Cups Cottage Cheese
4 Eggs
1/2 Tsp Salt
1 Cup Almond Flour
2 Tbs Coconut Flour
1/2 Tsp Unflavored Gelatin
2 Tbs Maple Syrup
Mix Eggs and Cottage Cheese then add flour, gelatin, salt and maple syrup. Heat pan or griddle with a small amount of butter. Cook pancakes until golden (bubbles should remain before turning). Serve warm. Spinkle a little powered sugar on top and serve with fruit or chocolate chips if you like.
Put Cottage Cheese in a big bowl.
Mix in Eggs.
Add Almond Flour
Add Coconut Flour.
Add Gelatin.
Add Salt. Mix it all together.
Add Maple Syrup.
Grill them up in Butter. Add fruit or chocolate chips and enjoy!
