Over Easy Omelette – Bacon, Mushroom & Onion

I love to eat my eggs over easy.   I made these simple eggs this morning with some leftover bacon and mushrooms I had on hand.

First, I melted some butter from Grass Fed Cows (Kerrygold) and sautéed diced onion, mushroom and the leftover bacon.

Next, I cracked two eggs on top and added some ground pepper.

After the eggs solidified (I hate runny egg whites) I turned the whole thing over with a spatula and let it cook through.

I topped the Over Easy Omelette with some Salsa Verde and it was delicious!  So delicious I dove into eating it without taking a photo of the plate.  Oops!

Next time I think I’ll add a little shredded gruyere cheese over the top at the end so it gets nice and melty!  It’s a nice way to change up boring scrambled eggs.  Hope you enjoy it as much as I did!
