Breakfast Taco: Healthy School Lunches

Some weeks I make a big batch of breakfast tacos and keep them in the refrigerator for a quick breakfast.  They also make a really wonderful quick lunch item to have on hand.  The cafeteria has a microwave so I wrap them in parchment paper for easy reheating at school.  It’s always a fun treat to get to use the microwave!

Here’s what I packed today:

  • Rudi’s Spelt Whole Wheat Tortilla, Free Range Scrambled Eggs, Nitrate Free Bacon, Organic Shredded Cheese
  • Sliced Oranges
  • Spinach
  • Carrot, Celery and Cucumber salad
